First of all, if you want to remove the shortcut for Siri from the macOS toolbar, what you should do is go to the system preferences app on your Mac, and then from the main menu, choose the option "Siri".

Once inside, at the bottom is the option that interests us in this case, which by default in the latest versions of macOS is always marked. Is about the option "Show Siri in the menu bar", and all you have to do is uncheck it.
